Homemade Hamburger Helper

  • 1 pound lean ground beef
  • 1 small onion, finely chopped
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1 teaspoon garlic powder
  • pinch to 1/2 teaspoon cayenne powder
  • salt and pepper to taste
  • 1 1/2 cups milk
  • 1 1/2 cups beef broth
  • 2 cups uncooked macaroni
  • 1 (8 oz) can tomato sauce
  • 2 cups shredded cheddar cheese
Instructions
  1. Heat a large skillet over medium heat. Brown the ground beef, onion, paprika, parsley, garlic powder, cayenne powder, salt and pepper. If using a ground beef with a higher fat content add in the seasonings after draining the grease.
  2. Stir in the milk, broth, macaroni and tomato sauce. Bring to a boil, cover and reduce heat to a simmer. Cook for 10-12 minutes or until pasta is tender. Stir occasionally to prevent sticking.
  3. Stir in cheddar cheese until melted.

Cowboy Casserole

1 packet taco seasoning
2 lbs ground beef
1 celery stalk
1 onion
1 can tomato sauce
2 cups cheese shredded
2 cups frozen super sweet white corn
1 can black beans

1.5 cups flour
1 tsp baking powder
1/2 cup butter melted
1 cup whole milk

saute onion celery and beef and then drain
add taco seasoning, tomato sauce, corn and beans
place in big casserole dish
top with cheese

mix together topping...flour, baking powder, melted butter, and milk
top over casserole and bake 350 degrees for 40 minutes.

Swedish Meatballs

Ingredients

  • 1 cup beef stock
  • 1 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon soy sauce
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon dried rosemary
  • 1/2 (20 ounce) package frozen cooked meatballs, thawed

Directions

  1. Whisk together the beef stock, heavy cream, flour, soy sauce, black pepper, and rosemary in a large saucepan until smooth. Cook and stir over low heat until thickened, about 10 minutes, stirring occasionally. Stir in the meatballs, and continue cooking until meatballs are heated through, about 5 more minutes.

Turkey Meatloaf

2 lbs meat
1.5 cups bread crumbs
1.5 cups shredded parm cheese
2 eggs
1 caramelized onion
sage

mix all together and bake covered 375 45 minutes

in mean time use mayonaise as a base and add teriyaki sauce and soy sauce just to taste
should have a nice strong flavor

after done baking, uncover, add sauce and put back in oven uncovered for about 10 more minutes.

Slow Cooked Beef Stew

1 can cream of mushroom soup
1 pack onion soup mix
1 cup water
cubed beef chunk and cubed sirloin
2 cubed potatoes
bunch of baby carrots

put in crock pot and cook on low for 8 hours

Shephard's Pie with Ground Beef

1 lb ground beef
2 leaves fresh basil
1 chopped onion
1 tbs minced garlic
1/2 cup tomato sauce or 1 can diced tomato
1 cup peas or carrots
1 egg
1/4 cup sour cream
4 potatoes mashed
1/2 cup milk
1/2 cup shredded cheddar cheese

saute onion and garlic, add beef and basil and cook until brown.
add cooked peas and tomatoes sauce or diced tomatoes
put in casserole dish
beat cooked potatoes, milk, sour cream and egg.
top beef mixture
bake 350 15 minutes
add shredded cheese and cook 5 additional minutes

Buffalo Chicken Chili

1 tablespoon extra-virgin olive oil (EVOO)

  • 2 tablespoons butter
  • 2 pounds all-white meat ground chicken breast
  • 1 large carrot, peeled and finely chopped
  • 1 large onion, chopped
  • 3 ribs celery, finely chopped
  • 5 large cloves garlic, chopped
  • 1 tablespoon smoked paprika (you can substitute with chipotles or chipotle chili powder)
  • 1 bay leaf
  • Salt and freshly ground black pepper
  • 2 cups chicken stock
  • 1/4 to 1/2 cup hot sauce, depending on how hot you like it
  • 1 15-ounce can tomato sauce (if you have a big can of tomatoes, don't go to the store to get the sauce, it's fine. Just use what you have)
  • 1 15-ounce can crushed tomatoes
  • 1 7-ounce bag yellow corn chips
  • 1 7-ounce bag blue corn chips
  • 3/4 pound blue cheese, crumbled, recommended type Maytag Blue
  • 1/2 cup flat-leaf parsley leaves, chopped (a couple of handfuls)

Preheat oven to 375°F or broiler to medium

Place a large pot over medium-high heat, add 1 turn of the pan of EVOO, about 1 tablespoon, and the butter. Once the butter has melted and the pot is hot, add the ground chicken. Brown it, using the back of a wooden spoon to break it up in to small pieces, about 5-6 minutes. Add the carrot, onion, celery, garlic, paprika, bay leaf and some salt and pepper. Cook, stirring frequently, for about 3-4 minutes. Add the chicken stock and scrape up any brown bits on the bottom of the pot. Add the hot sauce, tomato sauce and crushed tomatoes, and bring up to a bubble. Simmer for 8-10 minutes to let the flavors come together.

While the chili is simmering, spread the yellow and blue corn chips out on a cookie sheet. Top with the crumbled blue cheese and transfer to the oven to melt the cheese, about 4-5 minutes. If using the broiler, 2-3 minutes should do the trick. Remove from the oven and sprinkle with the chopped parsley.

Top each serving of buffalo chicken chili with a few blue cheese-topped corn chips.

Short Ribs

SHORT RIBS
1 CUP OF RED WINE
3 TBSP DIJON MUSTARD
1/2 ONION DICED
2 cups beef broth
egg noodles
PUT SALT AND PEPPER ON THE SHORT RIBS AND THEN BROWN THEM IN A PAN.
THEN POUR INTO THE CROCKPOT AND PUT THE RIBS LAST. COOK ON LOW FOR 8 HOURS AND SERVE OVER EGG NOODLES.
PS. TAKE THE SHORT RIBS OFF THE BONE BEFORE SERVING.

1 lb Ground beef
1/4 tsp of the following:
paprika
salt
onion powder
garlic powder
cayenne pepper

tortilla
shred cheese
sour cream
bacon cooked
refried beans
salsa

Cook beef
add seasonings
Add refrined beans and heat through
put beef mix on tortilla
top with bacon
salsa
cheese
and sour cream
roll up and eat

Salisbury Steak

  • 1 (10 ounce) can condensed cream of mushroom soup, undiluted
  • 1 tablespoon prepared mustard
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon prepared horseradish
  • 1 egg
  • 1/4 cup dry bread crumbs
  • 1/4 cup finely chopped onion
  • 1/2 teaspoon salt
  • Dash pepper
  • 1 1/2 pounds ground beef
  • 1 tablespoon cooking oil
  • 1/2 cup water
  • 2 tablespoons chopped fresh parsley

  1. In a bowl, combine the soup, mustard, Worcestershire sauce and horseradish; blend well. Set aside. In another bowl, lightly beat the egg. Add bread crumbs, onion, salt, pepper and 1/4 cup of the soup mixture. Add beef and mix well. Shape into six patties.
  2. In a large skillet, brown the patties in oil; drain. Combine remaining soup mixture with water; pour over patties. Cover and cook over low heat for 10-15 minutes or until meat is done. Remove patties to a serving platter; spoon sauce over meat. Sprinkle with parsley.
